Our guilt free MATCHA cake recipe

Y’all know here at PLR we love Matcha.

What’s matcha? I have enough on my plate!

Those green lattes and smoothies regularly seen in our fav celebs hands? That’s matcha. It’s a powder that comes from Japan and has been mixed with water or milk for centuries – the green liquid more like liquid gold thanks to its 1,001 health and skin benefits (and nope, we’re not exaggerating). This ain’t no fad.

Ok, fine. What does it do?

You know how green tea is always touted for its AMAZING antioxidant benefits? Well, matcha trumps it – it has 137 more antioxidants than your average green tea bag. It boosts blood flow (hello, glow), heart health and keeps the immune system healthy. This magic powder somehow manages to keep you alert and relaxed at the same time (so none of those over-caffeinated jitters – coffee fiends, I’m looking at you).

Our editor has shared her guilt free AKA gluten free, dairy free, refined sugar free matcha cake recipe. We’ll thank her later ;-)

- 60 g (¼ cup) coconut oil

- 230 ml (1 cup) unsweetened oat milk (or any other plant-based milk)

- 1 teaspoon vanilla extract

- 8 tablespoons maple syrup (or sub any other sweetener)

- 150 g (1 ¼ cup) almond meal

- 150 g (1 ¼ cup) gluten-free flour

- 2 tablespoons fresh lemon juice

-1/4 teaspoon of bicarb soda

-1.5 tablespoons of matcha powder - we love Wakana Matcha powder

- 2 teaspoons baking powder

Pre heat Oven to 180c.

Add all dry ingredients to a mixing bowl and stir well.

Add oat milk, vanilla extract, lemon juice, coconut oil and maple syrup to the dry ingredients, mixing well.

Grease cake tin and pour mixture in.

Bake for 25-30 mins or until the top becomes golden brown and a toothpick comes out clean from the middle. If there's batter on the pick, keep the cake in the oven for a few more minutes, checking periodically until it's done.

Enjoy xx
